I am plannimg on using USPS for my shipping handler. Some things, I plan to ship regular and others as priority. But I will cover these cost and give them free shipping. My question is, how do I change the shipping dates? On my tial version it says products will be shipped in 1-2 days. I would like to change it to 5-7 business days.

This is part of your product status (In stock, out of stock, etc) You can change this on Catalog > Product Statuses.

Keep in mind that this field is intended to convey how long it will take for you to actually send the customer's products, not how long it will take for them to receive the package.

Customers may think that 5-7 days is a long time for you to take to send out a package. 

How do you suggest we handle products from different drop ship vendors that are technically "In Stock", yet all have varying times before being shipped (Think Amazon)?

Based on what I've seen thus far, I would have to suggest moving the 'Usually Ships In' data to the individual product page.

I would suggest making separate In Stock product statuses for the different drop shippers if thats the case.

In Stock A, In Stock B.

I think having the Usually Ships In time on the product would be a product management nightmare.
