peg:I was wondering where the setting is to control if qty in stock is shown on the product page. If possible it would be great if this was something we could control per product or per category. We have certain items that are discontinued and we only have the amount on hand to sell - so we would like to show our customers how much is available. thanks!
The setting to show the quantity in stock on the product page is a theme level setting, so unfortunately you can't limit to a certain product or category. It is found on the main theme settings page.

Can a depletion of stock trigger a change in other areas of the product; ie Availability?
Yes, automatic status changes can be triggered by the removal or addition of inventory. You can find the settings for this on the product statuses settings page.
