When I click on a category, the products are not displayed in the order I would like. How do I change that?

there is something called the sort order that can be defined for each product. The lower the number, teh higher it will show in the caegory. I suggest spacing them out by 10 each, so you have room to insert new products:

ItemId   sortorder

item1    10

item2     20

item3    30
